This rich and airy chocolate mousse combines dark chocolate and whipped cream for a decadent dessert perfect for any occasion.
Ingredients

200g dark chocolate, chopped
3 large eggs, separated
1/4 cup granulated sugar
1 cup heavy cream
1 tsp vanilla extract
A pinch of salt
Instructions
- Melt the chocolate in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.
- In a separate bowl, beat the egg yolks with the sugar until pale and thick. Stir in the melted chocolate and vanilla extract.
- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold into the chocolate mixture.
- In a chilled bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until fully combined.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
Notes
- For a richer flavor, use high-quality dark chocolate with at least 70% cocoa.
- Ensure the chocolate mixture is cool enough before folding in the egg whites and whipped cream to prevent curdling.
- Garnish with chocolate shavings, whipped cream, or fresh berries if desired.
