Ingredients

  • 2 tbsp olive oil
  • 2 onions, quartered

  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh thyme

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season the chuck roast with salt and pepper.
  3. In a large oven-proof pot, heat olive oil over medium-high heat. Sear the roast on all sides until golden brown, about 3-4 minutes per side.
  4. Remove the roast and set aside. In the same pot, add onions and garlic, cooking until softened.
  5. Return the roast to the pot, and add carrots, potatoes, beef broth, bay leaves, and thyme.
  6. Cover and transfer to the oven. Bake for about 3 hours, or until the meat is fork-tender.
  7. Remove from oven, let rest for 15 minutes before slicing.
