- 3 lb chuck roast
- 2 tbsp olive oil
- 2 onions, quartered
- 4 carrots, cut into chunks
- 4 potatoes, quartered
- 4 cups beef broth
- 3 cloves garlic, minced
- 2 bay leaves
- Salt and pepper to taste
- Fresh thyme
Instructions
- Preheat oven to 325°F (163°C).
- Season the chuck roast with salt and pepper.
- In a large oven-proof pot, heat olive oil over medium-high heat. Sear the roast on all sides until golden brown, about 3-4 minutes per side.
- Remove the roast and set aside. In the same pot, add onions and garlic, cooking until softened.
- Return the roast to the pot, and add carrots, potatoes, beef broth, bay leaves, and thyme.
- Cover and transfer to the oven. Bake for about 3 hours, or until the meat is fork-tender.
- Remove from oven, let rest for 15 minutes before slicing.
