Ingredients

  • 6 large eggs
  • 1¼ cups cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/2 cup cooked, crumbled bacon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
  3. Stir in spinach, bell peppers, bacon, and cheddar cheese.
  4. Grease silicone molds or muffin tins with non-stick spray.
  5. Pour the egg mixture evenly into the molds, filling about three-quarters full.
  6. Bake for 20-25 minutes until the egg bites are set and slightly golden on top.
  7. Let cool for a few minutes before removing from molds.
