- 1 cup shredded cheddar cheese

Instructions
- Preheat the oven to 350°F (175°C).
- In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
- Stir in spinach, bell peppers, bacon, and cheddar cheese.
- Grease silicone molds or muffin tins with non-stick spray.
- Pour the egg mixture evenly into the molds, filling about three-quarters full.
- Bake for 20-25 minutes until the egg bites are set and slightly golden on top.
- Let cool for a few minutes before removing from molds.
